Quick and Easy Pot Roast
Contributed by Megan Hand
What busy
mom wouldn’t like this recipe?
Recently,
I had a pot roast at a friend’s house that was so delicious
that I headed right off to QFC to get one to cook.
However,
when I was there I ran into the butcher and he tipped me off
with a sure fire and easy recipe . . . here it goes.
One
pre-seasoned pot roast from QFC
One large bottle of V-8 juice
2 packages of McCormick’s brown gravy
potatoes / cut into large
chunks
bag of baby carrots
In a large
covered pot, pour the bottle of V-8 and whisk in the two
packages of brown gravy.
Place the
pot roast in the juice gravy mixture and cover the pot and
put into a 300 degree oven for 3 to 4 hours depending.
One hour
prior to serving add the potatoes and one half hour prior to
serving add the bag of baby carrots.
It’s that
easy!

Stove-Top Playdough
From FEED ME, I'M YOURS
Ingredients:
1 cup white flour
1/4 c salt
2 Tbl cream of tartar
1 c water
2 tsp vegetable food coloring *
1 Tbl oil
Mix dry ingredients in a medium pot. Add
water, coloring and oil. Cook & stir over medium heat for
3-5 minutes. Mixture will look like a globby mess.
When it forms a ball in the center of the pot, turn out and
knead on a lightly floured surface. Store in airtight
container. This is edible.
* Patti's recommends using Wiltons
bakers food coloring available at Factoria's Partytime
** You can also mix in different textures
(dryer lint, rice, sparkles), or smells (cinnamon, nutmeg,

Sweet Potato and Zucchini Bread
Contributed by Annie Cheng2 cups all
purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 cups sugar
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups grated zucchini
1 1/2 cups grated peeled sweet potato
1 cup chopped walnuts, toasted
Preheat oven to 350°F. Butter and flour 9x5x3-inch loaf pan.
Sift first 5 ingredients into medium bowl. Beat sugar, oil, eggs
and vanilla to blend in large bowl. Mix in zucchini and sweet
potato. Add dry ingredients and walnuts and stir well.
Transfer batter to prepared pan. Bake until
tester inserted into center comes out clean, about 1 hour 20
minutes. Cool bread in pan on rack 15 minutes. Cut around bread
to loosen. Turn out onto rack and cool completely. (Can be
prepared 1 day ahead. Wrap in foil and let stand at room
temperature.)
I make some of the substitutions suggested by
other people to make it more healthy (i.e. less sugar, part
whole wheat flour, applesauce for some of the oil). Enjoy!
